Recipe Introduction
This is a classic holiday dish served in our family for years.
List of Ingredients
Shells or Skins 4 lbs is 60 shells if purchased
4 eggs beaten
2 cups water
1 cup flour
1/2 teaspoon salt
Filing:
2 lb. Ricotta 2 large containers will fill 60 skins
1 lb. Mozzerella shredded
3 eggs
Salt and Pepper
Parsley
Parmesan Cheese
Recipe
Beat all ingredients together to make shells. Pour small amount into a greased pan the size of a pancake. Brown lightly on both sides and set aside the shells.
Filling: Beat together the filling ingredients and then stuff about 2 tablespoons into the shells.
Line the shells on a cookie sheet that has been lined with foil and little tomatoe sauce on the foil. Top shells with tomatoe sauce and bake in oven 350 degrees for about 30 minutes.
