Didn't like the chicken Marsala recipes I have tried so I gave a go with my thoughts of how it should be
List of Ingredients
Chicken Cutlets thinly sliced about 2 lbs
flour for dredging
Oil and butter for the fry pan
Marsala Wine 1 1/2 cup
Heavy cream 1/2 cup
tarragon sprinkle
fresh or canned mushrooms sliced about 1 1/2 cups
drain if canned and cleaned if fresh
Salt and Pepper to taste
Recipe
Dredge the chicken in flour, add oil and butter to heated pan, Brown up chicken and put in a piece of corning ware. When all done pour Marsala wine in pan and scrape all the bits up, add heavy cream, Salt, pepper, tarragon and stir till thick and creamy. Add the mushrooms, heat through. Pour over chicken, cook in a 350 degree oven for about 20 min.
Serves about 4 people
