Turkey Cutlets with Apples

List of Ingredients
1 lb. turkey cutlets
1/4 cup flour
1/4 teaspoon each salt and pepper
2 tbls olive oil
1 clove garlic crushed
2 granny smith or other tart apples, peeled and sliced
1/3 cup apple juice
1/3 cup Chicken stock
1/2 cup low fat sour cream
1 tbls Dijon mustard
1 tbls lemon juice
1/2 teaspoon tarragon
2 tbls chivesRecipe
In a plastic bag, mix flour with salt and pepper add the cutlets and shake well until they are lightly covered with flour mixture. Warm oil in large pan over med- high heat. Sauté garlic until brown and remove and discard. Add cutlets to pan and cook turning them over once. Remove from the pan and place on a platter to set aside. Add the apples to the pan and sauté for 3 min. Add about 1 tbls of flour that is left in the plastic bag to pan and stir well. Stir in the apple juice and chicken stock a little at a time stirring with a whisk. Mix in next five ingredients and when you have a nice smooth sauce return turkey to the pan and continue to cook for about 3 min. Serve over rice or noodles
