Made this canned died tomatoes that had basil and garlic already
List of Ingredients
l tablespoon butter
1 medium onion diced
1 carrot diced
1 rib of celery diced
1 can (28 oz) or two smaller diced tomatoes with the juice
1 qt chicken broth
1/2 teaspoon nutmeg
1 1/2 up half and half, heavy cream or evaporated milk
Salt and Pepper to taste
Recipe
In a large heavy pot heat the butter over medium heat, when melted add the onions, carrot and celery. cook stirring until vegetables soften about 5 min.
Add the tomatoes and their juice, the chicken stock and the nutmeg. Bring to a boil, cover and reduce heat to simmer. Continue to cook stirring occasionally until tomatoes start to melt about 15 min
For a smooth cream soup puree soup with stick blender, then stir in cream, season to taste with salt and pepper
For a heartier soup add 2 cups of vegetables like spinach, kale, potatoes, butternut squash,or pasta,pastina or orzo can be added as well
When additional vegetables/pasta are cooked add the cream
Parmesan cheese can be sprinkled on top when serving
You can eliminate the pasta and add shrimp
