    Just like my eggplant parm but using zucchini


    List of Ingredients


    • (3) Zucchini sliced into rounds
    • 1 1/2 cups approx. flour
    • Oil to coat pan for frying 1/2 inch high
    • (3) eggs
    • (2) cups mozzarella cheese shredded
    • salt and pepper
    • (1) 15 oz. can tomato sauce


    Instructions


    1. Wash and slice zucchini, add a tablespoon of water to eggs, beat. Dip zucchini into egg mixture then flour
    2. Add rounds to frying pan, fry till golden on each side. Put a thin layer of tomato sauce on bottom of corning ware pan. Layer the rounds of zucchini with sauce and cheese, salt and pepper
    3. When all done frying put a layer of cheese on top. Bake at 350 degrees for 30 - 40 minutes or until bubbly.
    4. Serves 5
