    DRUNKEN FRUIT COCKTAILS

    As have many of our recipies, this one came about because we had to unexpectedly invite a foreign guest over for supper and wanted something very unique, but fast and simple, to feed him.This recipe serves 4.


    List of Ingredients


    • 2 #2 Cans of high quality pears, peaches, or fruit cocktail.
    • 2 jiggers of Bristol Cream Sherry or good brandy.


    Instructions


    1. Completely drain all of the juice from the canned fruit into an electric blender, add the liquer to the juice and mix.
    2. If you use peaches or pears that are precut into halves, further cut each half into three equally sized wedges.
    3. Scoop 1/4 of the fruit into each of four stemmed cocktail glasses.
    4. Divide the juice and liquer mixture into five equal parts, pour one part into each glass of fruit, and reserving the fifth part.
    5. Seal the top of each glass with a bit of plastic wrap and place them, along with the reserved juice, into the refrigerator to chill.
    6. Just before serving remove the glasses and reserved juice from the refrigerator. Remove the plastic wrap from the glasses.
    7. Use an electric blender or an electric hand-whisk to whip the reserved juice into a creamy froth.
    8. Quickly pour an equal amount of the froth over the top of the fruit in each glass and serve immediately.


    Final Comments


    If you do not have Bristol Cream, a good sweet sherry will be alright. You may also want to try some Irish Cream if using pears. If you can find some THAI pineapple chunks, they will go great with the sherry or brandy. DO NOT use Hawaiian pineapple. It is far too acidic for this dessert.
