- 1 ea. 16 oz. Poundcake.
- 4 T. Sweet (unsalted) butter.
- 1 pint Peach, strawberries & cream, or pralines & cream ice cream.
Instructions
- Carefully remove a thin slice from each end of the poundcake, toss down YOUR hatch, and slice the rest of the cake crosswise into eight equal servings. Lay the slices flat on a sheet of waxed paper.
- Melt the butter over low heat, being careful not to let it separate.
- Heat a flat, teflon-coated grill over medium heat until a drop of water sprinkled on it dances.
- Lightly brush the top side of each cake slice with the butter and place them butter-side- down on the grill. While they fry, brush the remaining butter on the reverse sides of the cake.
- As soon as the first side is moderately browned, flip the slices over and brown the remaining side.
- Slip a slice of the fried cake onto a pie plate, place a scoop of ice cream on top and serve while the cake is still warm.
Final Comments
If you have a tabletop burner, this is one of those recipies that goes great done at the table for a brunch or party. The smell of the frying cake slices is particularly inviting to your guests.
