ROASTED POTATOES AND ONIONS
Recipe Introduction
If you have a baking potato and a good size onion around the kitchen, this recipe will give you go-along vegetables for almost any entree. It is quick to prepare and requires little, if any, attention during cooking.This recipe serves 4:
List of Ingredients
- 2 each Large Russet Baking potatoes.
- 2 each Large yellow or brown onions. Texas sweets are perfect.
- 1 T. Virgin olive oil.
- 3/4 t. Salt (non-iodized),
- 1/4 t. Freshly ground (fine) black pepper.
- 1/2 t. Powdered onion.
- 1 t. Crisco shortening.
Instructions
- Preheat an oven to 400 F.
- Scrub the potato skins with a Scotch plastic scrubbing pad and running water until they are clean. Cut them in half from end to end along their narrowest side.
- Remove the outer skins and trim both end from each onion. Slice each in half horizontally across the center.
- Select a glass baking dish that is big enough to hold all four potatoes and four onions cut-side down. Cover it with heavy aluminum foil, foiding the foil out over the sides of the dish and smoothing flat in the bottom of the dish.
- Mix together the onion powder, 1/2 t. of the salt, and the shortening until fully combined.
- Pour the olive oil into the baking dish, sprinkle in the pepper and the remaining salt, and spread all over the surface of the bottom foil.
- Place the onions into the baking dish cut-side down. Rub around a little bit to assure coverage with the oil.
- Repeat Step 7 with each halved potato. Then coat the skins of each potato with the seasoned shortening.
- Place the dish, uncovered, on a central rack in the oven. Normally, this recipe is cooked for 40 minutes in a well calibrated oven, but check with a toothpick for tenderness at 25 minutes.
- When the vegetables are properly done they will have well browned cut faces and there will be some caramellmization of the onions.
- Remove from the baking dish with a spatula and serve as quickly as possible to maintain flavor.
Final Comments
The potatoes may be served with any topping that you like. You will find that the coating put on their skins before baking has provided a wonderful flavor to them.
