    Potato Ham Tortilla

    2 lb scrubbed potatoes (not peeled)
    chopped onions sautéed - optional
    chopped pepper sautéed - optional
    6 oz diced ham
    shredded cheese
    6 eggs
    3 Tbsp milk
    1/4 tsp oregano
    1/4 tsp paprika


    Recipe

    Slice potatoes in half the short way and cook until fork tender. Drain, cool, peel and cut into 1/4" thick slices.
    Mix onions and peppers if using with ham and potatoes. Pat smooth in the bottom of a generously greased 9-10" cast iron pan. Cover with shredded cheese. Whisk eggs, milk, oregano, and paprika and pour over potato/ham/cheese mixture. Bake 30-40 minutes at 375 until eggs set and slightly browned. Let set 10 minutes, slice, and serve.
