    Zucchini Cobbler

    List of Ingredients

    8 cups chopped zucchini
    2/3 cup lemon juice
    1 cup sugar
    1 tsp cinnamon
    1/2 tsp nutmeg
    4 cups flour
    2 cups sugar
    1 tsp cinnamon
    3/4 cup margarine

    Recipe

    Place zucchini and lemon juice in kettle and cook over medium heat until soft - 10-15 minutes. Stir in 1 cup sugar, 1 tsp cinnamon, and 1/2 tsp nutmeg. Cook 1 more minute. Mix rest of ingredients for crust. Stir 1 cup crust mixture into zucchini mixture. Pat 1/2 of crust in 9 x 13 pan. Add zucchini mixture over crust. Place rest of crust over the zucchini and bake at 375 until lightly brown 30-40 minutes.
