Lemon Pepper Pasta

List of Ingredients
- 8 oz Very thin spaghetti
- 2 tsp olive oil
- 2 large peppers (Red, yellow or green)- total of 3 cups in 1/8 inch strips
- 1 TBLS grated lemon peel
- 1/4 tsp pepper
- 1 cup skim milk
- 8 oz shredded cheddar cheese (1 cup)
Instructions
- Cook pasta and drain
- Heat oil in large skillet over medium heat
- Add peppers, cook and stir frequently for about 5 minutes
- Add lemon peel and pepper and mix well
- Reduce heat to low, add cooked pasta along with milk and cheese.
- Toss until heated throughly
- Serve immediately
