Apricot Scones

- 1 1/2 cup flour
- 1/2 cup quick cooking oatmeal
- 1/4 cup sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup butter, cubed
- 2 eggs
- 1/4 cup sour cream
- 1 Tablespoon milk
- 3/4 cup chopped dried apricots
- 3 Tablespoons brown sugar
- 1 Tablespoon quick cooking oatmeal
- 1 Tablespoon butter, softened

Instructions
- Combine the flour, 1/2 cup oats, sugar, baking powder and salt.
- Cut in the 1/3 cup butter until mixture is fine crumbs.
- Beat eggs and set aside 1 Tablespoon for a glaze.
- Combine the sour cream, milk and remaining eggs.
- Add the apricots and then stir into flour mixture until the dough clings together.
- Turn out onto a lightly floured surface and knead 12-15 times.
- Divide the dough in half.
- Pat each half into a 7 inch circle.
- Combine the brown sugar, 1 Tablespoon oats and butter.
- Sprinkle mixture over one of the dough circles.
- Place the other dough circle on top.
- Brush the top with the reserved beaten egg and sprinkle with additional sugar.
- Cut into wedges, but do not separate.
- Bake in a 400 degree oven for 15-20 minutes or until golden brown.
- Cool slightly. Cut again as necessay. Serve warm.
