    List of Ingredients


    • 1 1/2 cup flour
    • 1/2 cup quick cooking oatmeal
    • 1/4 cup sugar
    • 2 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/3 cup butter, cubed
    • 2 eggs
    • 1/4 cup sour cream
    • 1 Tablespoon milk
    • 3/4 cup chopped dried apricots
    • 3 Tablespoons brown sugar
    • 1 Tablespoon quick cooking oatmeal
    • 1 Tablespoon butter, softened
    • sugar


    Instructions


    1. Combine the flour, 1/2 cup oats, sugar, baking powder and salt.
    2. Cut in the 1/3 cup butter until mixture is fine crumbs.
    3. Beat eggs and set aside 1 Tablespoon for a glaze.
    4. Combine the sour cream, milk and remaining eggs.
    5. Add the apricots and then stir into flour mixture until the dough clings together.
    6. Turn out onto a lightly floured surface and knead 12-15 times.
    7. Divide the dough in half.
    8. Pat each half into a 7 inch circle.
    9. Combine the brown sugar, 1 Tablespoon oats and butter.
    10. Sprinkle mixture over one of the dough circles.
    11. Place the other dough circle on top.
    12. Brush the top with the reserved beaten egg and sprinkle with additional sugar.
    13. Cut into wedges, but do not separate.
    14. Bake in a 400 degree oven for 15-20 minutes or until golden brown.
    15. Cool slightly. Cut again as necessay. Serve warm.
