    Maple Nut Fudge

    1 1/2 c maple syrup
    1 3/4 c sugar
    2/3 c heavy cream
    1/4 t salt
    1/4 c unsalted butter, cubed
    1 t vanilla
    1 c chopped walnuts

    Recipe



    1. Grease an 8 in square pan.
    2. In a med sized saucepan, combine syrup, sugar, heavy cream and salt.
    3. Bring to a boil over med high heat, stirring constantly.
    4. Once boiling, cook 7 to 8 minutes or until mxture reaches 238 degrees on a candy thermometer.
    5. Remove pan from heat.
    6. Beat in the butter and vanilla with an electric mixer on high for 8 to 9 min or until thickened, light in color and fudge loses its glossy finish.
    7. Stir in the nuts.
    8. Spread into the prepared pan.
    9. Let stand until firm, about 25 min before cutting into squares.
    10. Store in fridge.
