Meringue Coconut Brownies

List of Ingredients
- 3/4 cup butter, softened
- 1 1/2 cups brown sugar, divided
- 1/2 cup sugar
- 3 eggs, separated
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 cups chocolate chips
- 1 cup coconut
- 3/4 cup chopped walnuts
Instructions
- In a large bowl, cream the butter, 1/2 cup brown sugar and sugar.
- Add egg yolks and vanilla, beating for 2 minutes.
- Combine flour, baking powder, baking soda and salt.
- Add to creamed mixture and mix well. Batter will be stiff.
- Spread into a greased 13x9 pan.
- Sprinkle chocolate chips, coconut and walnuts over the top.
- Beat egg whites until soft peaks form.
- Beat in remaining brown sugar, 1 TBLS at a time and beat until stiff peaks form.
- Spread over the top.
- Bake at 350 degrees for 30 to 35 minutes or until done.
- Cool on a wire rack.
- Cut into bars and store in fridge.
