    Applesauce Cake w/ Caramel Icing

    2 1/2 c flour
    1 3/4 c sugar
    1 T cocoa
    1 1/2 t baking soda
    1/4 t cinnamon
    1/2 t baking powder
    1/2 t allspice
    1/4 t cloves
    1/4 t salt
    1/2 c butter, softened
    1/2 c buttermilk
    1 1/2 c applesauce
    2 eggs
    1 c raisins
    1/2 c chopped nuts
    1 c dark brown sugar
    1/2 c milk
    2 T butter
    1/4 t salt
    1 1/2 c confectioners sugar
    1 t vanilla

    Recipe



    1. Heat oven to 350 degrees.
    2. Grease and flour a 9x13 pan.
    3. Mix together the flour, sugar, cocoa, baking soda, cinnamon, baking powder, allspice, cloves and salt.
    4. Cut the butter into slices and add to bowl along with the buttermilk and applesauce.
    5. Beat in eggs.
    6. Fold in the raisins and nuts.
    7. Pour into prepared pan and bake 50 to 60 min or until toothpick clean.
    8. Cool on wire rack.
    9. Bring the brown sugar, milk, butter and salt to a boil in a saucepan over med high heat, stirring constantly.
    10. Reduce heat to low and simmer until thick, about 5 min, stirring occassionally.
    11. Remove from heat.
    12. Stir in confectioners sugar and vanilla.
    13. Beat on med speed until smooth.
    14. Let cool for 5 min before spreading on the cake.
