Caramel Apple Cake

List of Ingredients
- 1 1/2 cups oil
- 1 1/2 cup sugar
- 1/2 cup brown sugar
- 3 eggs
- 3 cups flour
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
- 3 1/2 cups diced , peeled apples
- 1 cup chopped walnuts
- 2 tsp vanilla
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/3 cup half and half
- dash of salt
- 1 cup powdered sugar
Instructions
- In a bowl, combine oil and sugars.
- Add eggs, one at a time, blending well after each addition.
- Combine dry ingredients and add to egg mixture, mixing well.
- Fold in apples, walnuts and vanilla.
- Pour into a greased and floured 10 inch tube/bundt pan.
- Bake at 325 degrees for 1 1/2 hr or until done.
- Cool for 10 minutes and remove to wire rack to cool.
- In a double boiler, heat brown sugar , half and half, butter and salt until sugar is dissolved.
- Cool to room temperature.
- Beat in the powdered sugar until smooth.
- Drizzle over the cake.
