    List of Ingredients


    • 1/2 cup flour
    • 1/3 cup sugar
    • 3 TBLS cold butter
    • 1/2 cup coconut
    • 2 1/4 cup flour
    • 1/2 tsp salt
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 3/4 cup cold butter
    • 2/3 cup vanilla yogurt
    • 1 TBLS lemon juice
    • 2 tsp grated lemon peel
    • 1 egg
    • 1 egg yolk
    • 1/2 cup lemon curd
    • 1/2 cup powdered sugar
    • 1 tsp water
    • 1 tsp lemon juice


    Instructions


    1. In a bowl, combine the flour and sugar.
    2. Cut in the butter until mixture resembles coarse crumbs.
    3. Stir in the coconut and set aside.
    4. For the batter, combine the flour, salt, baking powder and baking soda in a bowl.
    5. Cut in butter until mixture resembles coarse crumbs.
    6. Combine the yogurt, lemon juice, lemon peel, egg and yolk.
    7. Stir into dry mixture ingredients just until moistened (mixture will be stiff).
    8. Spread 2 cups of batter into a greased 9 inch sprinform pan.
    9. Sprinkle with 3/4 cup of the coconut mixture.
    10. Drop the lemon curd by 1/2 tsp fulls over the top to within 1/2 inch of pan edge.
    11. Carefully spoon remaining batter over the top and sprinkle with remaining coconut mixture.
    12. Place pan on a baking sheet.
    13. Bake at 350 degrees for 55 to 60 minutes or until done.
    14. Cool for 10 minutes, remove from sides of pan.
    15. Combine the powdered sugar, water and lemon juice.
    16. Drizzle over warm cake.
    17. serve warm or at room temperature.
