Lemon Curd Coffee Cake

- 1/2 cup flour
- 1/3 cup sugar
- 3 TBLS cold butter
- 1/2 cup coconut
- 2 1/4 cup flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup cold butter
- 2/3 cup vanilla yogurt
- 1 TBLS lemon juice
- 2 tsp grated lemon peel
- 1 egg
- 1 egg yolk
- 1/2 cup lemon curd
- 1/2 cup powdered sugar
- 1 tsp water
- 1 tsp lemon juice
Instructions
- In a bowl, combine the flour and sugar.
- Cut in the butter until mixture resembles coarse crumbs.
- Stir in the coconut and set aside.
- For the batter, combine the flour, salt, baking powder and baking soda in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Combine the yogurt, lemon juice, lemon peel, egg and yolk.
- Stir into dry mixture ingredients just until moistened (mixture will be stiff).
- Spread 2 cups of batter into a greased 9 inch sprinform pan.
- Sprinkle with 3/4 cup of the coconut mixture.
- Drop the lemon curd by 1/2 tsp fulls over the top to within 1/2 inch of pan edge.
- Carefully spoon remaining batter over the top and sprinkle with remaining coconut mixture.
- Place pan on a baking sheet.
- Bake at 350 degrees for 55 to 60 minutes or until done.
- Cool for 10 minutes, remove from sides of pan.
- Combine the powdered sugar, water and lemon juice.
- Drizzle over warm cake.
- serve warm or at room temperature.
