Praline Pumpkin Torte

List of Ingredients
- 3/4 cup brown sugar
- 1/3 cup butter
- 3 TBLS whipping cream
- 3/4 cup chopped pecans
- 4 eggs
- 2 tsp pumpkin pie spice
- 1 2/3 cup sugar
- 1 tsp baking soda
- 2 cups pumpkin
- 1 tsp salt
- 1/4 tsp vanilla
- 1 cup oil
- 2 cups flour
- 2 tsp baking powder
- Topping: 1 3/4 cup whipping cream
- 1/4 cup powdered sugar
- 1/4 tsp vanilla
- chopped pecans
Instructions
- In a sauce pan, combine the brown sugar, butter and whipping cream.
- Cook and stir over low heat until sugar is dissolved.
- Pour mixture into the bottoms of 2 nine inch greased round cake pans.
- Spinkle with the 3/4 cup chopped pecans and cool.
- Mix eggs, oil and sugar.
- Add the pumpkin and vanilla.
- Combine the dry ingredients.
- Add the dry ingredients to the pumpkin mixture and beat until blended.
- Spoon over brown sugar mixture in the pans.
- Bake at 350 degrees for 30 to 35 minutes or until done.
- Cool for 5 minutes in the pans; then, remove to cool completely on wire racks.
- Beat whipping cream until soft peaks form in a bowl.
- Beat in the sugar and vanilla until firm to spread.
- Place one cake layer praline side up on serving platter.
- Spread 2/3rds of whipped cream over cake.
- Top with second cake layer and remaining whipped cream.
- Sprinkle with additional chopped pecans to serve. Store leftovers in fridge.
