    List of Ingredients


    • 3/4 cup brown sugar
    • 1/3 cup butter
    • 3 TBLS whipping cream
    • 3/4 cup chopped pecans
    • 4 eggs
    • 2 tsp pumpkin pie spice
    • 1 2/3 cup sugar
    • 1 tsp baking soda
    • 2 cups pumpkin
    • 1 tsp salt
    • 1/4 tsp vanilla
    • 1 cup oil
    • 2 cups flour
    • 2 tsp baking powder
    • Topping: 1 3/4 cup whipping cream
    • 1/4 cup powdered sugar
    • 1/4 tsp vanilla
    • chopped pecans


    Instructions


    1. In a sauce pan, combine the brown sugar, butter and whipping cream.

    2. Cook and stir over low heat until sugar is dissolved.

    3. Pour mixture into the bottoms of 2 nine inch greased round cake pans.

    4. Spinkle with the 3/4 cup chopped pecans and cool.

    5. Mix eggs, oil and sugar.

    6. Add the pumpkin and vanilla.

    7. Combine the dry ingredients.

    8. Add the dry ingredients to the pumpkin mixture and beat until blended.

    9. Spoon over brown sugar mixture in the pans.

    10. Bake at 350 degrees for 30 to 35 minutes or until done.

    11. Cool for 5 minutes in the pans; then, remove to cool completely on wire racks.

    12. Beat whipping cream until soft peaks form in a bowl.

    13. Beat in the sugar and vanilla until firm to spread.

    14. Place one cake layer praline side up on serving platter.

    15. Spread 2/3rds of whipped cream over cake.

    16. Top with second cake layer and remaining whipped cream.

    17. Sprinkle with additional chopped pecans to serve. Store leftovers in fridge.
