Texas Chocolate Cupcakes

2 c flour
2 c sugar
1 t salt
1/2 t baking soda
1/4 c baking cocoa
1 c water
1 c oil
1/2 c butter, cubed
2 eggs
1/3 c buttermilk
1 t vanilla
Frosting:
1 c brown sugar
1/2 c butter, cubed
1/4 c milk
2 to 21/4 c confectioner's sugar
additional milk if needed
Recipe
1. In a large mixing bowl, combine the flour, sugar, salt and baking soda.
2. In a large saucepan, combine the cocoa, water, oil and butter and bring to a boil over medium heat.
3. Add mixture to dry ingredients and mx well.
4. Combine the eggs, buttermilk and vanilla.
5. Add the mixture to batter and mix well (batter will be thin)
6.Fill paprer-lined muffin cups three-fourths full.
7. Bake at 350 degrees for 15 to 20 minutes or until toothpick clean.
8. Cool in pans for 10 minutes before removing to wire racks to cool completely.
9. In a heavy saucepan, combine the brown sugar, butter and milk.
10. Cook over low heat until sugar is dissolved.
11. Increase temperature to medium. Do not stir mixture. Cook 3 to 6 minutes or until bubbly and amber in color.
12. Remove from heat and cool to room temperature.
13. Transfer to a small mixing bowl.
14. Beat in confectioner's sugar. Adding more milk if needed to make to spreading consistency.
15. Spread over cupcakes.
