    Walnut Pear Coffee Cake

    List of Ingredients


    • 1 cup chopped walnuts
    • 1/3 cup brown sugar
    • 1 tsp cinnamon
    • 1/3 cup flour
    • 1/4 cup cold butter
    • 2 medium ripe pears, peeled and sliced
    • 2 tsp lemon juice
    • 1/2 cup butter, softened
    • 1 cup sugar
    • 2 eggs
    • 1 tsp vanilla
    • 1 3/4 cup flour
    • 3/4 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1 cup sour cream
    • 1/2 cup chopped walnuts


    Instructions


    1. In a bowl, combine the 1 cup walnuts, brown sugar and cinnamon, set aisde.
    2. Place flour in a bowl and cut in the 1/4 cup butter until mixture resembles coarse crumbs.
    3. Stir in 3/4 cup of nut mixture and set aside for the topping.
    4. Set aside remaining nut mixture for filling.
    5. Toss pears with the lemon juice, set aside.
    6. In a small bowl, cream the butter and sugar.
    7. Add eggs, one at a time, beating well after each addition.
    8. Beat in vanilla.
    9. Combine the flour, baking powder, baking soda and salt.
    10. Add to the creamed mixture alternately with the sour cream.
    11. Spread 2/3 rds of batter into a greased 9 inch springform pan.
    12. Top with reserved nut mixture (filling), pears and remaining batter.
    13. Sprinkle with walnuts and reserved topping mixture.
    14. Bake at 350 degrees for 50 to 55 minutes or until done.
    15. Cool in pan for 10 minutes before running a knife around pan edges and removing pan sides.
    16. Cool for 1 hr before cutting.
