Banana Macaroon Trifle

List of Ingredients
- 2 TBLS butter, softened
- 1 cup sugar
- 1 egg
- 1 cup coconut
- 1/2 cup oats
- 2 TBLS flour
- 1 tsp baking powder
- 1/4 cup milk
- 1 tsp vanilla
- 3 to 4 small bananas, sliced
- 1 TBLS pineapple juice
- 2 cups sweetened whipped cream
- cinnamon
Instructions
- Beat butter and sugar until well blended.
- Add egg and mix well.
- Combine coconut, oats, flour and baking powder.
- Combine milk and vanilla and add to sugar mixture alternately with coconut mixture.
- Spread into a greased 13x9 pan.
- Bake at 325 degrees for 25 to 30 minutes or until edges are golden brown.
- Cool completely and crumble.
- Set aside 1/4 cup of mixture for topping.
- Just before serving, toss bananas with pineapple juice.
- Layer a third of the macaroon crumbles, whipped cream and bananas.
- Repeat layers, sprinkling top with reserved macaroon crumbs.
- Sprinkle each serving with cinnamon to serve.
