    Roast Lemon Fennel Lamb

    2 T. grated lemon peel
    6 cloves garlic, minced
    3 T. olive oil
    2 T. balsamic vinegar
    1 T. fennel seeds, crushed
    1 1/2 t. salt
    1/2 t. pepper
    7 1/2 lb bone in lamb roast

    Recipe



    1. Reserve 1 t lemon peel.
    2. Combine the garlic, oil, vinegar, fennel. salt, pepper and remaining lemon peel.
    3. Cut six 1 inch wide slits into top and bottom of lamb.
    4. Rub garlic mixture over the lamb, pressing into slits.
    5. Roast at 350 degrees until done. (20 min/lb)
    6. Let stand 15 min before serving.
    7. Sprinkle with the reserved lemon peel before serving.
