Recipe Introduction
This makes a great filling for burritos or to just serve over rice.
List of Ingredients
- 1 chuck beef roast (2 1/2 to 3 pounds)
- 1 Tablespoon oil
- 1 1/2 cup water, more as needed
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 teaspoons oregano
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 can (4 ounce) chopped green chilies
- 2 cans (14 ounce each) diced tomatoes, undrained
- 1 Tablespoon flour
- 1/8 cup cold water
Instructions
- Brown the roast in the oil.
- Add the water, onion,garlic, oregano, salt and pepper.
- Cover and simmer for 2 1/2 hours or until meat is tender.Add additional water as needed to prevent burning.
- Remove roast and let stand until cool enough to touch.
- Shred meat.
- Return shredded meat to the pot.
- Add tomatoes and chilies.
- Bring to a boil; then, reduce heat and simmer for 30 minutes.
- Combine flour and cold water until smooth.
- Stir flour mixture into beef mixture.
- Cook over medium heat, stirring constantly until mixture is thickened and bubbly. Serve.
