Apple Date Spice Muffins

Recipe Introduction
This recipe originally came out of my mom's recipe file. I vaguely remebered the recipe. Her handwritten copy used all white flour and raisins instead of dates. I'm not a big fan of raisins in muffins, so I substituted dates and adjusted the flour amount with white and whole wheat flour. They came out moist and delicious.
List of Ingredients
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/3 cup quick cook or old fashioned oatmeal, uncooked
- 1 Tablespoon baking powder
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- 2 small apples, cored,peeled and diced
- 1/2 cup brown sugar
- 1 egg
- 3/4 cup milk
- 1/4 cup butter, melted
- 1/2 cup chopped dates
Instructions
- Combine flours,oats,baking powder, salt and spices.
- Combine brown sugar, milk, egg and butter.
- Combine wet with dry ingredients.
- Add apples and dates.
- Spoon batter into greased or paper lined muffin tins.
- Bake at 375 degree oven for 20 to 25 minutes or until done.
- Cool on wire rack.
