    List of Ingredients


    • 8 boneless/skinless chicken breasts
    • 1/3 cup plus 1 Tablespoon flour
    • 1 1/4 teaspoons salt
    • 1/8 teaspoon pepper
    • 3 Tablespoons butter
    • 1 1/2 cup fresh or frozen cranberries
    • 1 cup brown sugar
    • 3/4 cup water
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon allspice
    • 1/4 teaspoon cloves
    • 2 Tablespoons cider vinegar


    Instructions


    1. Combine the 1/3 cup flour, 1 teaspoon salt and pepper in a shallow dish.
    2. Coat the chicken in the flour mixture.
    3. Melt the butter in a large skillet over medium high heat.
    4. Add the chicken and cook, turning once, to brown on each side, about 10 minutes total.
    5. Remove the chicken and keep warm.
    6. Add the cranberries, brown sugar, water, spices and 1/4 teaspoon salt to the pan drippings.
    7. Cook over medium heat until the mixture comes to a boil.
    8. Whisk the 1 Tablespoon of flour into the vinegar.
    9. Whisk the flour mixture into the pan and continue whisking until the sauce thickens and comes to a full boil.
    10. Boil for 1 minute, then reduce heat to low.
    11. Return the chicken to the pan.
    12. Cover and simmer for 10 to 15 minutes or until chicken is done, turning once. Serve.
