Spiced Cranberry Chicken

List of Ingredients
- 8 boneless/skinless chicken breasts
- 1/3 cup plus 1 Tablespoon flour
- 1 1/4 teaspoons salt
- 1/8 teaspoon pepper
- 3 Tablespoons butter
- 1 1/2 cup fresh or frozen cranberries
- 1 cup brown sugar
- 3/4 cup water
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon cloves
- 2 Tablespoons cider vinegar
Instructions
- Combine the 1/3 cup flour, 1 teaspoon salt and pepper in a shallow dish.
- Coat the chicken in the flour mixture.
- Melt the butter in a large skillet over medium high heat.
- Add the chicken and cook, turning once, to brown on each side, about 10 minutes total.
- Remove the chicken and keep warm.
- Add the cranberries, brown sugar, water, spices and 1/4 teaspoon salt to the pan drippings.
- Cook over medium heat until the mixture comes to a boil.
- Whisk the 1 Tablespoon of flour into the vinegar.
- Whisk the flour mixture into the pan and continue whisking until the sauce thickens and comes to a full boil.
- Boil for 1 minute, then reduce heat to low.
- Return the chicken to the pan.
- Cover and simmer for 10 to 15 minutes or until chicken is done, turning once. Serve.
