    Cinnamon Carrot Pie

    List of Ingredients




    2 c cooked, mashed carrots
    1 (12oz) can evaporated milk
    1 c sugar
    2 eggs, beaten
    1/2 t salt
    1/4 t ginger
    2 t cinnamon
    1 unbaked pie crust

    Recipe



    1. Combine the carrots, milk, sugar, eggs, salt, ginger and cinnamon and beat for 2 min.
    2. Pour into pie crust.
    3. Bake for 15 min at 400 degrees; then, lower heat to 350 degrees and bake for 45 min or until filling is set.
    4. Cool on a wire rack.
