Cranberry Raisin Pie

- 1 cup sugar
- 4 1/2 tsp. flour
- 1/2 cup water
- 1 1/2 cup fresh or frozen cranberries, chopped
- 3/4 cup raisins, finely chopped
- 1 TBLS butter
- 1 1/2 tsp vanilla
- 9 inch pie crust for double crust pie
Instructions
- In a large saucepan, combine the sugar and flour.
- Add water and stir until smooth.
- Bring to a boil.
- Add cranberries and raisins and reduce heat, covering and simmering for 15 minutes, stirring occassionally.
- Remove from heat and stir in the butter and vanilla. Cool slightly.
- Pour filling into prepared pie crust shell.
- Top with remaining pie crust in a lattice pattern.
- Bake at 375 degrees for 30 minutes, until filling is bubbling and crust is golden brown, covering edges with foil during the last 10 minutes.
- Cool to serve and store leftovers in the fridge.
