    Cranberry Raisin Pie

    List of Ingredients


    • 1 cup sugar
    • 4 1/2 tsp. flour
    • 1/2 cup water
    • 1 1/2 cup fresh or frozen cranberries, chopped
    • 3/4 cup raisins, finely chopped
    • 1 TBLS butter
    • 1 1/2 tsp vanilla
    • 9 inch pie crust for double crust pie


    Instructions


    1. In a large saucepan, combine the sugar and flour.
    2. Add water and stir until smooth.
    3. Bring to a boil.
    4. Add cranberries and raisins and reduce heat, covering and simmering for 15 minutes, stirring occassionally.
    5. Remove from heat and stir in the butter and vanilla. Cool slightly.
    6. Pour filling into prepared pie crust shell.
    7. Top with remaining pie crust in a lattice pattern.
    8. Bake at 375 degrees for 30 minutes, until filling is bubbling and crust is golden brown, covering edges with foil during the last 10 minutes.
    9. Cool to serve and store leftovers in the fridge.
