    Crumb Topped Cherry Pie

    List of Ingredients




    Crust:
    1 1/4 c flour
    1/2 t salt
    1/2 c oil
    2 T milk

    Filling:
    1 1/3 c sugar
    1/3 c flour
    2 cans (14.5 oz each) pitted tart cherries, drained
    1/4 t almond extract

    Topping:
    1/2 c flour
    1/2 c sugar
    1/4 c cold butter

    1 c heavy whipping cream
    1 T confectioners sugar
    1/8 t vanilla

    Recipe



    1. In a bowl, combine flour and salt.
    2. Combine oil and milk. Stir into flour mixture with a fork until just blended.
    3. Pat evenly onto the bottom and up the sides of a 9 inch pie plate. Set aside.
    4. In a bowl, combine filling ingredients and pour into crust.
    5. For topping, combine the flour and sugar in a small bowl.
    6. Cut in the butter until mixture resembles coarse crumbles.
    7. Sprinkle over the filling.
    8. Bake at 425 degrees for 35 to 45 min or until crust is golden brown and filling is bubbly.
    9. Cool on wire rack.
    10. Just before serving, beat cream until thickened.
    11. Add sugar and vanilla, beating until soft peaks form.
    12. Serve whipped cream with the pie.
