Lemon Pie

Recipe Introduction
My mom loves lemon meringue pie. This recipe has turned out to be one of her favorites.
List of Ingredients
- 1 cup sugar
- 1/2 cup flour
- 2 cups buttermilk
- 1/2 cup water
- 3 egg yolks, beaten lightly
- 6 Tablespoons fresh lemon juice
- 2 Tablespoons butter
- 3 egg whites
- 6 Tablespoons sugar
- 1 baked pie shell
Instructions
- In a saucepan, combine 1 cup sugar and flour.
- Stir in the buttermilk and water until smooth.
- Cook and stir over medium heat until thickened and bubbly, about 4 minutes.
- Reduce heat and stir for 2 more minutes.
- Remove from the heat.
- Temper the egg yolks and return to mixture in the saucepan.
- Bring to a gentle boil; cook and stir for 2 more minutes.
- Remove from the heat.
- Stir in the lemon juice and butter until butter is melted.Set aside.
- Beat the egg whites with a blender on medium speed until soft peaks form.
- Gradually beat in the 6 Tablespoons of sugar, 1 Tablespoon at a time until stiff peaks form on high speed.
- Pour the hot filling into the prepared pie shell.
- Spread meringue over the top of filling, making sure to seal to the edges.
- Bake in a 350 degree oven for 15 minutes or until meringue is golden brown.
- Cool for 1 hour on a wire rack.
- Refrigerate for at least 5 hours before serving.
