    Cucumber Vegetable Salad

    List of Ingredients




    1 large seedless cucumber, thinly sliced
    1/4 t salt
    1 yellow pepper, cut into thin strips
    3 med carrots, sliced thinly
    2 c cherry/grape tomatoes, halved
    1/2 med red onion, thinly sliced
    1/2 c chopped fresh cilantro
    1/4 c olive oil
    1/4 c rice wine vinegar

    Recipe



    1. Toss the cucumber with the salt and set aside for 30 to 45 min, then drain.
    2. Add remaining vegetables and cilantro.
    3. Combine the oil and the vinegar, add to the vegetables and toss to coat.
    4. Can refrigerate several hours before serving.
