    Grilled Vegetable Salad

    List of Ingredients




    1/4 c olive oil
    2 T red wine vinegar
    1 T. dijon mustard
    1 T lime juice
    3 cloves garlic
    2 t sugar
    1 t lemon pepper
    2 zucchinis, halved lengthwise
    2 red peppers, halved lengthwise
    1 large sweet onion, quartered
    1/3 c chopped cilantro
    1 t grated lime zest

    Recipe



    1. In a large bowl, combine the oil, vinegar, mustard, lime juice, garlic, sugar and lemon pepper.
    2. Add the vegetable and toss to coat.
    3. Grill the vegetables until done.
    4. Slice the zucchini into 1 inch slices, the red peppers into 2 inch slices and the onion into thin slices/wedges.
    5. Return the vegetables to the marinade.
    6. Add the cilantro and the lime zest.
    7. Toss. Serve warm or at room temperature.
