    Hazelnut Vegetable Salad

    List of Ingredients




    1/4 olive oil
    2 T lemon juice
    2 t cider vinegar
    2 t honey
    1/4 t salt
    1/4 t pepper
    1/2 lb sliced fresh mushrooms
    1/2 med red pepper, julienned
    2 celery ribs, chopped
    3 T minced fresh chives
    8 asparagus spears, steamed and chilled
    2 T chopped hazelnuts

    Recipe



    1. In a small bowl, combine the oil, lemon juice, vinegar, honey, salt and pepper.
    2. In a large bowl, combine the mushrooms, pepper, celery and chives.
    3. Drizzle with the dressing and toss to coat.
    4. Refrigerate until ready to serve.
    5. Place asparagus on serving plates.
    6. Top with the mushroom mixture and hazelnuts to serve.
