    Mediterranean Barley Salad

    List of Ingredients




    1 1/2 c water
    2/3 c quick cooking barley
    1 can (14 oz) quatered artichoke hearts, chopped
    2 med tomatoes, chopped
    1 T Greek seasoning
    1 t grated lemon rind
    2 T lemon juice
    1 T olive oil
    1/4 to 1/3 c crumbled feta cheese

    Recipe



    1. Cook the barley in the water until done. Cool in refrigerator.
    2. In a bowl, combine the remaining ingredients, except the cheese.
    3. Add the cooled barley and toss well.
    4. Add the cheese to serve.
