    Veggie Salad in Lettuce Cups

    List of Ingredients




    1 large cucumber, peeled, seeded and chopped
    2 small carrots, shredded
    12 radishes, coarsely chopped
    Dressing:
    2 T olive oil
    1 T white balsamic vinegar
    1 T lemon juice
    3 t minced fresh thyme
    1 t honey mustard
    1/2 t salt
    1/4 t pepper

    8 Boston lettuce leaves

    Recipe



    1. In a small bowl, combine the cucumber, carrots and radishes.
    2. Combine the dressing ingredients.
    3. Pour dressing over the vegetables, tossing to coat.
    4. Serve the salad in the lettuce leaves.
