    1 small red onion, thinly sliced
    1 c water
    1 jar (7 1/4 oz) roasted red peppers, drained and chopped
    1/3 c cider vinegar
    2 garlic cloves,peeled and halved
    1/2 t oregano
    1/4 t salt
    1/4 t pepper
    1/4 t ground cumin

    1 garlic clove, minced
    1 t ground cumin
    1/2 t salt
    1 pork tenderloin (1 lb)
    1 t olive oil
    8 slices swiss cheese
    8 slices sourdough or other crusty bread

    Recipe



    1. For the relish, in a small saucepan over med heat, bring the onion and water to a boil.
    2. Cook and stir for 1 minute, then drain.
    3. Add the onion to the peppers, vinegar, garlic, oregano, salt, pepper and cumin.
    4. Let mixture stand at room temperature for 1 hr; then, remove the garlic. Relish may be made ahead and stored in the refrigerator for up to a week.
    5. In a small bowl, mask the minced garlic,cumin and salt.
    6. Rub over the pork tenderloin.
    7. Bake at 425 degrees for 25 to 30 min or until done (160 degrees on meat thermometer)
    8. Let pork stand 10 min before thinly slicing.
    9. Heat the oil in a large skillet or griddle over med heat.
    10. Top four slices of bread with the pork, desired amount of relish and 2 slices of cheese.Top with remaining bread.
    11. Cook sandwiches 2 to 4 min per side or until golden brown.
