2 English muffins, split and toasted
2 T. plain yogurt
1 T spicy brown or dijon mustard
1/2 t tarragon
4 slices Canadian bacon
4 (1/4 inch) tomato slices
2 slices swiss cheese, cut in half
4 poached eggs

Recipe
1. Preheat broiler.
2. Place toasted muffins on a baking sheet.
3. Combine the yogurt, mustard and tarragon; spead over the muffin halves.
4. Top each muffin with a slice of canadian bacon, tomato and swiss cheese.
5. Broil for 1 to 2 min,until cheese is melted and beginning to brown.
6. Top each sandwich with a poached egg.
7. Sprinkle with paprika to serve.
