    I keep debating whether to list this as a sandwich vs. salad recipe. Whenever I make a roasted leg of lamb, I purposely roast a larger than I need one , so I can have leftover lamb to make this sandwich/salad.


    List of Ingredients


    • 2 TBLS lemon juice
    • 2TBLS olive oil
    • 2 TBLS red wine vinegar
    • 1 tsp garlic, minced
    • 1 tsp sugar
    • salt and pepper to taste
    • 1/2 lb. roasted lamb, sliced
    • 1/2 cup thinly sliced red onion
    • 4 cups salad greens
    • 12 grape tomatoes, halved
    • 1 cucumber, peeled, halved, seeded and sliced
    • 4 pitas, warmed
    • 1/4 cup plain yogurt
    • 16 black or kalamata olives
    • 4 TBLS crumbled feta cheese.


    Instructions


    1. Whisk together the lemon juice, olive oil, red wine vinegar, garlic, sugar, salt and pepper.
    2. Saute lamb and onion until heated through.
    3. Toss salad greens, tomatoes and cucumber with the prepared vinaigrette.
    4. Divide salad mixture among the warmed pitas.
    5. Top with the lamb mixture.
    6. Garnish with the olives, yogurt and feta to serve.
