Beef and Barley Soup

List of Ingredients
- 1 large onion, coarsely chopped
- 2 cloves garlic, mashed
- 2 pounds stewing beef, cubed
- 2 Tablespoons oil
- 8 cups beef broth
- 2 bay leaves
- 4 Tablespoons brown sugar
- 4 carrots, thinly sliced
- 2 celery ribs, thinly sliced
- 4 ounces fresh mushrooms, sliced
- 2 cans (15.5 ounce each) diced tomatoes
- 2 T worcestershire sauce
- 1 c. quick cook barley, cook per pkg directions
Instructions
- Heat oil in a large pot.
- Saute onion and garlic for 1 minute.
- Add beef and brown.
- Add broth, bay leaves and brown sugar.
- Bring to a boil; then, reduce heat and simmer for 1 1/2 hours.
- Add carrots, celery and mushrooms;then, simmer for 30 minutes.
- Meanwhile, cook barley per package directions.
- Add undrained tomatoes, worcestershire sauce and cooked barley.
- Simmer for 15 minutes.
- Remove bay leaves before serving.
