    Beef and Barley Soup

    List of Ingredients


    • 1 large onion, coarsely chopped
    • 2 cloves garlic, mashed
    • 2 pounds stewing beef, cubed
    • 2 Tablespoons oil
    • 8 cups beef broth
    • 2 bay leaves
    • 4 Tablespoons brown sugar
    • 4 carrots, thinly sliced
    • 2 celery ribs, thinly sliced
    • 4 ounces fresh mushrooms, sliced
    • 2 cans (15.5 ounce each) diced tomatoes
    • 2 T worcestershire sauce
    • 1 c. quick cook barley, cook per pkg directions


    Instructions


    1. Heat oil in a large pot.

    2. Saute onion and garlic for 1 minute.

    3. Add beef and brown.

    4. Add broth, bay leaves and brown sugar.

    5. Bring to a boil; then, reduce heat and simmer for 1 1/2 hours.

    6. Add carrots, celery and mushrooms;then, simmer for 30 minutes.

    7. Meanwhile, cook barley per package directions.

    8. Add undrained tomatoes, worcestershire sauce and cooked barley.

    9. Simmer for 15 minutes.

    10. Remove bay leaves before serving.
