    Chicken and Vegetable Soup

    List of Ingredients


    • 1 pound boneless/skinless chicken breasts
    • 3 cups chicken broth
    • 1 teaspoon italian seasoning
    • 1 clove garlic, minced
    • 1/4 teaspoon paprika
    • 4 small potatoes, peeled and cut into 1 inch pieces
    • 3 small carrots, cut into 1/2 inch pieces
    • 2 celery ribs, cut into 1/2 inch pieces
    • 1 medium onion, cut into wedges
    • 2 Tablespoons chopped celery leaves
    • 2 Tablespoons flour
    • 1 1/2 teaspoons lemon juice.


    Instructions


    1. In a large saucepan, combine the chicken, 1 3/4 cup broth, italian seasoning, garlic and paprika. Bring to a boil.

    2. Cover and simmer on reduced heat for 10 minutes.

    3. Add the potatoes, carrots, celery, onion and celery leaves.

    4. Bring to a boil; then, cover and simmer on reduced heat for 20-25 minutes or until vegetables are tender.

    5. In a small bowl, combine the flour and 1/4 cup broth, stirring until smooth.

    6. Add remaining 1 cup of broth to the soup.

    7. Add the flour mixture and bring to a boil.

    8. Cook and stir for 2 minutes or until thickened.

    9. Stir in the lemon juice. Serve.
