    Unstuffed Cabbage Soup

    List of Ingredients


    • 1 Tablespoon oil
    • 2 pounds stew beef, cut into 1 inch chunks
    • 1 pound package coleslaw mix
    • 1 large onion, chopped
    • 1 can (28ounces) crushed tomatoes
    • 3 cans (14.5ounces each) beef broth
    • 1/3 cup brown sugar
    • 1 Tablespoon lemon juice
    • 2/3 cup uncooked rice, cooked, more if desired


    Instructions


    1. Heat the oil in a large pot over medium heat.

    2. Add beef and saute until browned.

    3. Add coleslaw mix and onion.

    4. Cook, covered, for 4 minutes, stirring after 2 minutes.

    5. Add tomatoes, beef broth, brown sugar and lemon juice, and bring to a boil.

    6. Reduce heat, cover and simmer on medium low heat for 45 minutes. Add the cooked rice during the last 15 min. Serve.
