Unstuffed Cabbage Soup

List of Ingredients
- 1 Tablespoon oil
- 2 pounds stew beef, cut into 1 inch chunks
- 1 pound package coleslaw mix
- 1 large onion, chopped
- 1 can (28ounces) crushed tomatoes
- 3 cans (14.5ounces each) beef broth
- 1/3 cup brown sugar
- 1 Tablespoon lemon juice
- 2/3 cup uncooked rice, cooked, more if desired
Instructions
- Heat the oil in a large pot over medium heat.
- Add beef and saute until browned.
- Add coleslaw mix and onion.
- Cook, covered, for 4 minutes, stirring after 2 minutes.
- Add tomatoes, beef broth, brown sugar and lemon juice, and bring to a boil.
- Reduce heat, cover and simmer on medium low heat for 45 minutes. Add the cooked rice during the last 15 min. Serve.
