    Cashew Peach Sweet Potatoes

    List of Ingredients

    6 med sweet potatoes
    1/2 c brown sugar
    1/3 c coarsely chopped cashews
    1/2 t salt
    1/4 t ginger
    1 can (15oz) sliced peaches, drained
    3 T. butter

    Recipe

    1. Place sweet potatoes in water to boil.
    2. Cook for 30 to 45 min or until just tender.
    3. Drain and cool slightly. Peel and cut into cubes.
    4. In a small bowl, combine the brown sugar, cashews, salt and ginger.
    5. Place half of the sweet potatoes in an ungreased 11x7 baking dish.
    6. Top with half of the peaches and brown sugar mixture.
    7. Repeat layers. Dot with butter.
    8. Cover and bake at 350 degrees fo 30 minutes.
    9. Uncover, bake for 10 minutes longer or until bubbly and heated through.
