    Coconut Sweet Potatoes

    List of Ingredients


    • 1 1/2 lb sweet potatoes
    • 1/3 cup crushed pineapple
    • 2 TBLS butter, melted
    • 1 TBLS orange juice
    • 1 egg, beaten
    • 1/2 tsp salt
    • 1/4 tsp mace
    • 1/8 tsp ginger
    • 1/3 cup coconut
    • 1/3 cup chopped pecans
    • 2 TBLS brown sugar


    Instructions


    1. Place sweet potatoes in a large kettle and cover with water.
    2. Bring to a boil; then reduce heat, cover and cook for 30 to 35 minutes or until tender.
    3. Drain and cool slightly.
    4. Peel potatoes and place in large mixing bowl to mash.
    5. Add the pineapple, butter, orange juice, egg, salt, mace and ginger; mix well.
    6. Transfer to a greased 11x7 pan.
    7. Bake uncovered at 400 degrees for 20 to 30 minutes or until heated through.
    8. Combine the coconut, pecans and brown sugar.
    9. Sprinkle over top of dish and bake for 8 to 10 minutes longer or until topping is lightly browned.
