Coconut Sweet Potatoes

- 1 1/2 lb sweet potatoes
- 1/3 cup crushed pineapple
- 2 TBLS butter, melted
- 1 TBLS orange juice
- 1 egg, beaten
- 1/2 tsp salt
- 1/4 tsp mace
- 1/8 tsp ginger
- 1/3 cup coconut
- 1/3 cup chopped pecans
- 2 TBLS brown sugar
Instructions
- Place sweet potatoes in a large kettle and cover with water.
- Bring to a boil; then reduce heat, cover and cook for 30 to 35 minutes or until tender.
- Drain and cool slightly.
- Peel potatoes and place in large mixing bowl to mash.
- Add the pineapple, butter, orange juice, egg, salt, mace and ginger; mix well.
- Transfer to a greased 11x7 pan.
- Bake uncovered at 400 degrees for 20 to 30 minutes or until heated through.
- Combine the coconut, pecans and brown sugar.
- Sprinkle over top of dish and bake for 8 to 10 minutes longer or until topping is lightly browned.
