    Parsnip Sweet Potato Pancakes

    List of Ingredients

    1 c flour
    3 T. fresh thyme or 1 1/2t dried thyme
    2 t. salt
    1/4 t. pepper
    4 eggs, beaten
    2 lb. sweet potatoes, peeled and grated
    1 lb, parsnips, peeled and grated
    12 green onions, sliced
    1/2 c. oil

    Recipe

    1. In a large bowl, combine the flour, thyme, salt and pepper.
    2. Stir in the eggs until blended.
    3. Add the sweet potatoes, parsnips and onions, toss to coat.
    4. Heat the oil to 375 degrees (med to med high heat).
    5. Drop the batter by 1/4 cupfuls a few at a time into the oil.
    6. Press lightly to flatten.
    7. Fry for 3 to 4 minutes on each side or until golden brown.
    8. Drain on paper towels. Serve warm.
