    1/2 c chopped onion
    1 T. butter
    2 c. uncooked instant brown rice
    1 can (14.5 oz) diced tomatoes with green chilies, undrained
    1 c water
    3/4 c beef broth
    1/2 t chili powder
    1/4 t salt
    1/4 t sugar
    1/4 t cumin
    2 T minced fresh cilantro

    Recipe



    1. In a large saucepan, saute the onion in the butter for 2 to 3 minutes or until tender.
    2. Add rice, cook and stir for 1 to 2 min.
    3. Stir in the tomatoes, water, broth, chili powder, salt, sugar and cumin.
    4. Bring to a boil; reduce heat, cover and simmer for 5 to 7 minutes.
    5. Remove from heat. Let stand for 5 minutes.
    6. Sprinkle with cilantro and serve.
