    Wild Rice Pilaf

    List of Ingredients


    • 2 cans (14.5 oz each) chicken broth
    • 3/4 cup uncooked long grain rice
    • 1 cup uncooked wild rice
    • 1 large onion, chopped
    • 1 garlic clove, minced
    • 2 medium carrots, sliced
    • 1/2 tsp dried rosemary
    • 1/2 c butter
    • 3 cups fresh brocolli florets


    Instructions


    1. In a large saucepan, bring broth to a boil.

    2. Add the wild rice, reduce heat and cook, covered, for 30 minutes.

    3. Add long grain rice,cook for 20 to 25 minutes or longer until liquid is absorbed and rice is tender.

    4. Meanwhile, saute the onion, garlic, carrots and the rosemary in the butter until tender.

    5. Stir in the rice and brocolli.

    6. Transfer to a greased shallow 2Qt baking dish.

    7. Cover and bake at 350 for 25 to 30 minutes or until brocolli is crisp tender.

    8. Fluff with fork before serving.
