Wild Rice Pilaf

- 2 cans (14.5 oz each) chicken broth
- 3/4 cup uncooked long grain rice
- 1 cup uncooked wild rice
- 1 large onion, chopped
- 1 garlic clove, minced
- 2 medium carrots, sliced
- 1/2 tsp dried rosemary
- 1/2 c butter
- 3 cups fresh brocolli florets
Instructions
- In a large saucepan, bring broth to a boil.
- Add the wild rice, reduce heat and cook, covered, for 30 minutes.
- Add long grain rice,cook for 20 to 25 minutes or longer until liquid is absorbed and rice is tender.
- Meanwhile, saute the onion, garlic, carrots and the rosemary in the butter until tender.
- Stir in the rice and brocolli.
- Transfer to a greased shallow 2Qt baking dish.
- Cover and bake at 350 for 25 to 30 minutes or until brocolli is crisp tender.
- Fluff with fork before serving.
