Wild Rice w/ Carmelized Onions

List of Ingredients
- 2 cups chicken broth
- 1/2 cup uncooked brown rice
- 1/2 cup uncooked wild rice
- 3 TBLS butter
- 3 medium onions, cut into thin wedges
- 2 tsp brown sugar
- 1 cup dried cranberries
- 1/2 tsp orange peel, grated
Instructions
- In a saucepan, combine the broth and rices and bring to a boil over medim high heat;then, reduce to low, simmering for 45 minutes or until rice is tender and liquid is absorbed.
- Meanwhile, melt butter in skillet over medium high heat.
- Add onions and brown sugar, cooking for 6 minutes or unitl any liquid is absorbed and onions are soft.
- Reduce heat to low and slowly cook onions, stirring often, for 25 minutes or until onions ae caramel in color.
- Stir in cranberries and cook over low heat until cranberries swell, about 10 minutes.
- Gently fold this mixture and orange peel into rice to serve.
