Lemon Asparagus

Recipe Introduction
This is my mom's favorite way to eat asparagus. It is especially great for Easter dinner.
List of Ingredients
- 2 bunches asparagus
- grated peel of 1 lemon
- juice of 1 lemon
- 1 small shallot, finely chopped
- 1 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup olive oil
Instructions
- Steam asparagus until crisp tender.
- Transfer asparagus to a shallow dish filled with ice water.
- Place in the refrigerator to chill.
- In a small bowl, combine lemon peel and juice, shallot, sugar, salt,pepper and oil.
- Pat chilled asparagus dry.
- Arrange asparagus on a serving platter.
- Drizzle with the dressing to serve.
