    Recipe Introduction


    This is my mom's favorite way to eat asparagus. It is especially great for Easter dinner.


    List of Ingredients


    • 2 bunches asparagus
    • grated peel of 1 lemon
    • juice of 1 lemon
    • 1 small shallot, finely chopped
    • 1 1/2 teaspoon sugar
    • 1/2 teaspoon salt
    • 1/8 teaspoon pepper
    • 1/4 cup olive oil


    Instructions


    1. Steam asparagus until crisp tender.
    2. Transfer asparagus to a shallow dish filled with ice water.
    3. Place in the refrigerator to chill.
    4. In a small bowl, combine lemon peel and juice, shallot, sugar, salt,pepper and oil.
    5. Pat chilled asparagus dry.
    6. Arrange asparagus on a serving platter.
    7. Drizzle with the dressing to serve.
