Sweet and Spicy Peanut Stirfry

List of Ingredients
1/2 t orange zest
1/3 c orange juice
3 T sugar
3T soy sauce
1 T cider vinegar
1 t grated gingerroot
1/8 t. crushed red pepper flakes
1/2 c peanuts
2 t sesame oil
2 c brocolli florets
1 med carrot, cut into matchstick sized pieces
1 med onion, cut into 1/4 in wedges
1 med red bell pepper, cut into thin strips
Recipe
1. In a small bowl, stir together the orange zest, juice, sugar, soy sauce,vinegar, gingerroot and red pepper flakes. Set aside.
2. Heat the skillet over med high heat.
3. Add the peanuts and toast for 2 min. Remove and set aside.
4. Heat the oil in the skillet. Add the vegetables and stir fry for 6 min or until crisp tender.
5. Place vegetables in a bowl and add peanuts. Keep warm.
6. Add orange juice mixture to the skillet. Bring to a boil and cook for 2 min or until reduced to 1/3 c, stirring constantly.
7. Pour sauce over the vegetables. Toss to coat to serve.
