    Beef, Barley and Cabbage Skillet Dinner

    List of Ingredients


    • 1 1/2 pound beef (sirloin), sliced thin
    • 1 Tablespoon finely chopped garlic
    • 2 small red onions, finely chopped
    • 1 pound bag coleslaw mix
    • 3 cups beef broth
    • 1 teaspoon caraway seeds
    • 1/4 teaspoon pepper
    • 1 1/2 cup quick cooking barley, uncooked


    Instructions


    1. Spray skillet with nonstick spray.
    2. Add beef and garlic and cook for 3 minutes to brown beef.
    3. Remove meat and set aside.
    4. Add onion to the skillet and cook 1- 2 minutes.
    5. Add coleslaw mix, broth, caraway, pepper and meat to skillet.
    6. Bring to a boil.
    7. Add the barley and reduce heat to medium low.
    8. Cover and simmer for 10-12 minutes or until barley is tender and most of the liquid is absorbed. Serve.
