Beef, Barley and Cabbage Skillet Dinner

List of Ingredients
- 1 1/2 pound beef (sirloin), sliced thin
- 1 Tablespoon finely chopped garlic
- 2 small red onions, finely chopped
- 1 pound bag coleslaw mix
- 3 cups beef broth
- 1 teaspoon caraway seeds
- 1/4 teaspoon pepper
- 1 1/2 cup quick cooking barley, uncooked
Instructions
- Spray skillet with nonstick spray.
- Add beef and garlic and cook for 3 minutes to brown beef.
- Remove meat and set aside.
- Add onion to the skillet and cook 1- 2 minutes.
- Add coleslaw mix, broth, caraway, pepper and meat to skillet.
- Bring to a boil.
- Add the barley and reduce heat to medium low.
- Cover and simmer for 10-12 minutes or until barley is tender and most of the liquid is absorbed. Serve.
