Herbed Stuffed Peppers

List of Ingredients
- 3 medium red peppers
- 1/2 lb ground beef
- 1/2 cup chopped onion
- 1 1/2 cup brown rice
- 1/4 tsp salt
- 1/8 to 1/4 tsp cayenne pepper
- 1/8 tsp allspice
- 1 (8oz) can tomato sauce
- 1/4 cup chicken broth
- 2 tsp balsamic vinegar
- 1 tsp basil
- 4 TBLS. parmesean, grated
Instructions
- Cut tops off of peppers and remove seeds and membranes.
- Steam peppers until crisp tender.
- In a skillet, cook beef and onion until beef is no longer pink. Remove from heat.
- Stir in the cooked rice, salt, cayenne and allspice.
- In a small saucepan, bring to a boil the tomato sauce and broth.
- Stir in the vinegar, basil, and 3TBLS cheese.
- Stir 1/2 of sauce mixture into rice mixture.
- Spoon rice mixture into pepper shells.
- Place upright into a greased baking dish.
- Cover and bake at 350 degrees for 30 minutes.
- Sprinkle with remaining cheese and bake uncovered for additional 5 to 10 minutes or until peppers are tender.
- Serve with remaining sauce.
